Figlio d’arte, ha cominciato a collaborare nella gastronomia-macelleria di famiglia fin da giovane. Dopo la formazione turistico-alberghiera si è specializzato in carni (cotture e tagli), buffet, dessert al piatto, cucina creativa, banchetti e sculture di ghiaccio. Nel suo curriculum anche un master al ministero delle Politiche agricole come classificatore di carcasse bovine.
Insignito del Collegium cocorum Fic, è stato executive chef di hotel a 4-5 stelle e per Costa Crociere, oltre che corporate chef per Msc Crociere collabora con numerosi hotel in Trentino Alto Adige.
Ora, libero professionista ma con un progetto personale già in fase di realizzazione, Giuliano coltiva grande passione e creatività: equilibrati e geniali accostamenti di sapori costituiscono il suo tratto distintivo. Nelle sue ricette la selezione dei prodotti è attenta alla stagione e alla qualità, con particolare riguardo verso i sapori della tradizione. Come sommelier professionista Ais e assaggiatore di grappe Anag, supervisiona anche gli abbinamenti con i vini.

Son of art, he started to collaborate in the family butchery-gastronomy since he was young. After hotel-tourist training he specialized in meats (cooking and cutting), buffet, dessert, creative cuisine, banquets and ice sculptures. His curriculum includes a master at the Ministry of Agriculture Politics as classifier of bovine carcasses.

Now he works as freelancer, but with a personal project already under construction. He has great passion and creativity: balanced and ingenious assortments of tastes are his distinctive mark. In his recipes the selection of products cares about the seasons and the quality, paying a particular attention to traditional tastes. As professional Ais sommelier and grappa Anag taster, he also supervises the combination with wines.
