Giuseppe Maggiore, detto Pino, classe 1959, a sei anni inizia a lavorare come garzone nella Cantina Siciliana di Trapani fino a diventarne proprietario e patron nel 1980. Chef e sommelier, esporta la cucina trapanese e l’arte della preparazione del couscous di pesce in tutto il mondo ad eventi e manifestazioni (Salone del Gusto, Expo, A Mediterranean Flavor Odyssey-Worlds of Flavor organizzato dal The Culinary Institute of America, Foodex) e come ospite di trasmissioni televisive, riviste, giornali nazionali e internazionali.
Dal 2018 al 2020 è presidente dell’Associazione Ristoratori Trapanesi. Nel luglio del 2019 è insignito del “Premio Saturno-Trapani che produce”. La sua trattoria è segnalata nelle principali guide enogastronomiche di tutto il mondo e, da ormai molti anni, vanta la prestigiosa chiocciola di Slow Food, con cui collabora.
Il Cùscusu della Cantina Siciliana è sicuramente un must: impossibile per un trapanese non averlo mai mangiato almeno una volta nella vita; impossibile per i turisti lasciare il capoluogo senza averlo assaporato. Pino Maggiore lo prepara ogni giorno, con passione e maestria, e il suo Cùscusu ha girato il mondo.

Giuseppe Maggiore, also known as Pino, was born in 1959. He started working as a shop boy in the Cantina Siciliana in Trapani before purchasing it and becoming ‘patron’ in 1980. As a chef and sommelier he exports the culinary tradition of Trapani and the art of making fish cuscus all over the word at happenings and events (Salone del Gusto, Expo, A Mediterranean Flavor Odyssey-Worlds of Flavor organised by The Culinary Institute of America, Foodex) and as a guest on tv shows, but also on magazines and newspapers, both in Italy and abroad.
From 2018 to 2020 he is President of the Associazione Ristoratori Trapanesi. In July 2019 he was awarded the “Premio Saturno-Trapani che produce”. His trattoria is recommended by the main enogastronomic guides all over the world. He has also been cooperating with Slow Food for many years now and he can boast their prestigious snail.
The Cantina Siciliana typical “Cùscusu” is a true must, it is impossible for a Trapani resident to have never eaten it at least once and it is impossible for tourists leave the city without tasting it. Pino Maggiore prepares it every day, with passion and skill, and his Cùscusu has traveled the world.
