Ugo Vairo nasce professionalmente tante lune fa. Nel corso della sua vita ha appreso il mestiere da molte personalità di spicco cogliendo le ispirazioni, affinando le tecniche e maturando la certezza che solo la materia prima di qualità può dare lo slancio giusto al piatto. Dopo diversi anni, sul finire del 1970 si sente pronto e apre un locale tutto suo. Dopo questa esperienza in riva al mare torna in Francia perché la sua sete di apprendere è ancora troppo grande e importanti sono le sue esperienze fatte di numeri e di alta cucina.
Successivamente, nella metà anni ‘80, sente che sta nascendo in lui il desiderio di indipendenza. Apre il Gallo della Checca, in mezzo all’impianto della sua tartufaia, realizzata grazie ad un progetto delle Università di Genova, Imperia e Cuneo. Nella sua cucina predominano le eccellenze locali e della vicina Costa Azzurra. Nel segno del rispetto per la materia prima e per la tradizione. Ama riconoscersi in un aforisma: “Posso resistere a tutto, tranne alle tentazioni”.

Ugo Vairo was born, professionally speaking, many moons ago. Through the years he learnt his job beside many great personalities, finding inspirations, refining techniques and maturing the conviction that only excellent raw materials can give a dish its right boost. After several years, at the end of the Seventies, he felt ready to start his own restaurant. After this first experience by the sea, he went back to France because his thirst for knowledge was still too strong. His experiences with great numbers and haute-cuisine were very important for his growth.
Later on, in the Eighties, he felt a desire for professional independence. It was then he started Il Gallo della Checca restaurant, in the middle of his truffle field, that he conceived thanks to a project with the Universities of Genoa, Imperia and Cuneo. In his cuisine products of excellence of the local territory and of nearby Costa Azzurra are predominant, always respecting raw materials and tradition. He loves to summarise his philosophy in a famous aphorism: “I can resist anything except temptation.”
